The Barbaresco Vallegrande DOCG embodies the most classic vision of the Ca’ del Baio winery. This red wine originates from historical vineyards located in the municipality of Treiso, within the homonymous geographic mention that directly surrounds the estate. The production approach privileges a profile of absolute finesse, focusing on the natural verticality and expressive harmony of the Nebbiolo grape, avoiding muscular extraction or artificial opulence.
Cellar Notes on Traditional Vinification
The technical protocol follows the historical methods of the Langhe region. The grapes come from vines planted between 1963 and 2000, cultivated on soils composed of calcareous-sandy gray marls with a western exposure. The harvest takes place during the first days of October. After destemming, fermentation is carried out in temperature-controlled stainless steel tanks, with a skin-contact maceration period ranging from 7 to 15 days. Following devatting, the wine ages for 24 months exclusively in large Slavonian oak casks, followed by an additional 6 months of bottle aging before release.

Temporal Evolution and Storage
The wine presents itself ready and elegant in its early years of commercialization, possessing an aging potential in the bottle that easily extends for 10-15 years. To preserve the integrity of the sensory profile, horizontal storage is recommended in dark cellars, free from vibrations and maintained at a constant temperature.
