Michele Chiarlo has a precise idea of wine: large bottles are born of meticulous and constant attention to every aspect of production. Practices respectful of the natural evolution of the vineyards, studied so that the varieties express themselves in their full recognizability; which provide for the protection of the soil, the vines and the man who works them, trying to preserve the biodiversity and the balance of the ecosystem. Which favor natural fertilization, grassing, green manure with nutritious essences; meticulous operations on the green with targeted and never exaggerated qualitative thinning, vineyard led by vineyard, log by log according to the artisan philosophy that considers each bunch a microcosm to be valued and preserved in its uniqueness and personality.
The Sommelier: Barbera home base Chiarlo, a beautiful red with violet reflections opens the nose with hints of ripe fruit, cherries and blueberry juice, herbal notes and light spices. In the mouth it opens decidedly fresh to continue sapid, the only small defect is the bitter closure. A beautiful wine for the whole meal, a fun wine to drink.
Recommended pairings: Excellent with traditional Piedmontese dishes. Game; Donkey stew; vegetable first courses with lamb meat; Savoy cabbage stew of pork; Chops better if spicy; well with the Neapolitan casatiello.
