Upon delivery to the cellar, the grapes are subjected to sorting, destemming and soft pressing, the musts ferment at a controlled temperature in steel tanks. All operations take place due to the force of gravity dictated by the storey structure of the cellar. During fermentation, attention is paid to temperature control so as to safeguard a varied bouquet, a month after bottling the vinification of the various cuvées which embodies the personality of Pianetto takes place.

Characteristics of the Grillo Baglio di Pianetto wine

The Grillo Timeo wine has a striking aromatic complexity, an elegant straw yellow color with golden reflections, enriched by six months' aging on the yeasts. From the olfactory examination it stands out from its compatriots for floral aromas of Mediterranean scrub, aromatic herbs, tropical fruit, with a hint of coffee and toasted cocoa. Excellent alcohol content 13.50% vol, balanced and minerally savory wine.
