Why I suggest Brunello di Montalcino DOCG 2017
This Brunello needs time for the opening, in the meantime I take the opportunity to get to know the history of the spouses Silvia and the winemaker Claudio Monaci, a compelling story full of respect for the Earth. The reward is a hundred times as much, placed in bottles entrusted to the time that took care of it. Undergrowth on the nose supported by a distance of flowers. On the palate it is smooth with very integrated delicate tannins. We will love this even with a nice amount of bottle age. His best time in anticipation in the next 3 years.
The Sommelier: Dark ruby red color with garnet reflections. It goes uncorked at least two hours before. When it opens, an exceptional olfactory explosion, aromas ranging from red fruits, black cherry, tobacco, then the earth, the land of Montalcino. More chocolate and spices. In the mouth excellent correspondence to the nose, full, very balanced, Rightly tannic and supported by a good alcoholic strength. Very persistent, great wine.
Suggested pairings: The freshness dictated by the flavor approaches the white truffle… .and a lot of stuff. Spring rolls; caponata Siciliana; parmigiana, products from the vegetable garden in oil, tasting with taralli scaldatelli from Foggia.
Uncork and decant before serving at 18-20 ° C in a large Ballon glass.
Wine Cellar: Sangiovese and Ciliegiolo vineyards surrounded by splendid centuries-old olive trees, working in first person, working for the environment and respecting practicing organic agriculture ...
